Salmon tagliatelle is very quick to make and an amazing way to use up remaining salmon. It can be made with just fresh salmon but it tastes even better with a mix of fresh and smoked salmon. Gravadlax works very well also.
A mix of shallots, carrots and dill is great. Carrots are optional. Fennel or celery can also add a nice freshness.
Fish stock adds a lovely taste.
Lemon zest and capers can be added to taste, and/or a dash of white wine.
