Beluga Lentils

This dish is incredibly easy to make, especially with the automatic pressure cooker. It goes well with chicken, salmon or pan-fried sausages. It’s also very good with a side-salad that has a tangy dressing with mustard (dijon) and vinegar.

Ingredients

  • Beluga lentils
  • Water
  • Carrot (sliced or diced)
  • Shallot or small red onion (chopped)
  • Bay leaf
  • Rosemary (optional)
  • Salt

If cooking on the stovetop, salt should be added at the end.

In the pressure cooker, salt can be added before starting to cook.

Pressure cooking time should be max. 10 minutes. At 10 minutes the lentils are already very creamy. (Experiment with 8 minutes for firmer lentils (better for salad)).
