This is a recipe inspired from Croatia. My mother used to make this dish to me for my birthday every year when I was a child. It is ridiculously simple and delicious in its simplicity.
The tricky part is to find green peppers that are small enough but not too small that they can be stuffed. The “dolma” peppers (sold sometimes here in Sweden) are just perfect. They are lighter green in colour and they make for the perfect portions. Other types that work are slightly light green and pointy.
Ingredients
- Peppers (number depends on size, rule is one to three / person – it freezes well)
- Ground meat (1/2 beef – 1/2 pork or 1/1 beef, about 500g should be enough but depends on th batch size)
- Risotto rice (arborio works well, carnaroli or vialone also but quality is not as important as for a risotto)
- Tomato puree (about 1 Tbsp)
- Salt
- Parsley
- Flour (about 1-2 Tbsp)
