Curried Salmon Soup

This recipe is inspired by Monica Ahlberg’s “Vardags Mat”.

Ingredients

  • Salmon (about 100-150g / person)
  • Carrot
  • Mushrooms (champignons, about 100g)
  • Red pepper
  • Shallots
  • Leek
  • Curry (European, mild or strong)
  • Oregano, dried
  • Flour for thickening the soup
  • Stock (from fonds du chef, fish or veg, or stock cube, about 1 liter)
  • Liquid cream, full fat
  • Broccoli
  • Fresh thyme for decoration

For the avocado cream

  • Avocado
  • Crême fraîche (1dl)
  • Lemon juice
