A crowd pleaser when comes the time for barbecues. A classic at Casa Gustafssson. I don’t think there is any other single receipe that I have been asked to give away as much as this one.

Ingredients

  • Chicken thigh filets (boneless and skinless) approx. 800g
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp thyme
  • 1 tsp ground cinnamon
  • 3 tsp ground cumin (spiskummin)
  • 1 tsp chile powder / cayenne pepper
  • 1 tsp dryed thyme or 2 tsp frozen / fresh thyme
  • 2 garlic cloves, grated

What you do

  1. mix all the ingredients for the marinade
  2. put the chieck thighs in the marinade and make sure they are well covered
  3. leave to marinate as long as possible, at least 20 minutes
  4. cook on hot, then low grill for approx. 20 minutes
  5. check for doneness
  6. serve with pita bread or oriental bread, raita, lebanese aubergines and/or tabouleh
