Pickled onions

This is the easiest idiot proof way to pickle onions.

Ingredients

  • red onions (preferably small sized)
  • 1 dl white wine vinegar
  • 1 tbsp sugar (regular)
  • 1 tsp salt (regular, not flakes)
  • mustard seeds, yellow, brown and/or black (optional)
  • bay leaf (optional)
  • black pepper corns (optional)

What to do

  1. mix the vinegar, sugar and salt and stir until diluted
  2. peel and slice the red onions and put them in a jar as you go pack somewhat tightly – no need to crush them (so you stop peeling and slicing when the jar is packed!)
  3. poor the vinegar mixture over the onions, and be sure that all the onions are covered. If you need more mixture, make more according to the same proportions as above (try with half for example)
  4. add the spices if using
  5. turn the mixture once or twice with a fork
  6. use after 1 hour, but better if you can wait 1-2 days (then they become really nice and pink as shown on the featured image)
  7. keep in the fridge. after 1 week it will be perfect, and the flavour will become more and more interesting over time, but the colour will fade. We tried after one year and it was still edible, quite delicious in fact but completely brown so a little less appetizing than when it is bright pink!
